Excel4Pro

The EXCEL4PRO project is an initiative aimed at strengthening the capacity of excellence hubs of Türkiye, Greece, and Ukraine to promote innovation in the development of novel foods based on plant proteins.

Proteins play an important role in a healthy diet, yet the environmental impact of animal-based food chains has become a pressing concern. While there is an increasing trend toward incorporating more plant sources in diets, the current generation of commercial plant-based alternatives remains suboptimal, highlighting the need for further innovation and improvement.

A central focus of EXCEL4PRO is the exploration and utilization of crop varieties with high potential to support a plant-protein-based economy. These include:

  1. Oilseeds (sunflower, pumpkin, sesame, groundnut)
  2. Legumes (varieties of lentils, chickpeas, faba beans, lupin)
  3. Mushrooms, recognized as valuable plant protein sources.

The project also prioritizes the characterization of plant proteins, focusing on their functional properties, such as:

  1. Emulsification
  2. Foaming
  3. Gelation

To develop next-generation plant-based food products, EXCEL4PRO incorporates innovative approaches, including:

  1. Pretreatment of crops, such as fermentation
  2. Novel extraction techniques, including microwave and ultrasound methods
  3. Protein solution purification, to improve quality and efficiency.

By combining advanced research, sustainable technologies, and interdisciplinary collaboration, the project aims to address these gaps in plant-based alternatives while promoting sustainable and functional food systems. EXCEL4PRO aspires to contribute to a more resilient and environmentally friendly global food chain, ensuring a healthier and more sustainable future.
