FreshiT

FreshiT is an initiative aimed at addressing critical challenges in the fields of food and agriculture. By combining advanced technology the project seeks to transform traditional practices and enhance the preservation of the quality and nutritional value of fresh produce. Through scientific research and innovative approaches, FreshiT highlights the importance of developing efficient,  and environmentally responsible methods to ensure the sustainability and food safety.

At the heart of the project lies the innovative application of osmotic dehydration and edible coatings for fresh fruit and vegetable pieces. These techniques provide an exceptional approach to preserving and enhancing the quality of fresh produce, maintaining their nutritional properties and flavor without relying on chemical preservatives. FreshiT aims to deliver exportable, nutritious, and bio-functional fruit snacks that meet the demands of modern consumers while promoting health and sustainability.

The project’s foundation is a low-cost yet high-impact procedure that  empowers local producers and the food industry to compete effectively in global markets. Collaborators

Project “FreshiT” falls under the call “Proof of Concept” on the topic of Environment and Energy, an action of the Technology Transfer Hub: Science Agora Innovation to Society. Supported by Google and in collaboration with five leading scientific organizations—EKEFE Demokritos Research Center, ACEin Entrepreneurship and Innovation Center – OPA, National Technical University of Athens (NTUA), ATHINA Research Center, and the University Research Institute of Communication & Computer Systems (ICCS)—the project leverages interdisciplinary expertise to deliver impactful solutions.
